A) HOW TO REMOVE BITTERNESS OR SWEAT EGGPLANT
First you need to know how to choose them. Push your finger on it, gently. If the flesh is hard is not ready. If the flesh presses in but bounces back it is ripe. If the thumb indentation remains, the eggplant is over-ripe.
Need: salt, a bowl, something heavy to place on them.
- Wash vegetables
- Cut them in slices
The skin has vitamins. It is right to eat with peel if: it is organic, or if you´ll grill it. The peel will serve as support.
- Put slices in a bowl. Sprinkle salt. Place something heavy on top. It can be a teapot, marmalade jar. Put at the refrigerator. Set aside for 30 min. to 1hr.
- After 30 min. or 1hr. the eggplants sweat the bitter substance! We also dehydrate them not to let them absorb to much oil while cooking them.
- You can rinse them to take off salt. Now they are ready to be cook in any recipe
B) HOW TO COOK EGGPLANT IN PAN OR GRILL
Once you have remove the bitterness of them, you can cook them in a pan or grill. Ingredients: eggplant in slices, olive oil, fine herbs.
Put olive oil in the pan or grill. Press each piece gently to help cooking. According to texture and thickness you might need to turn them over and also press them until they are soft and have taken a darker color.
